The company that sells these magnificent pearls is called Cafiti. If the name rings a bell, maybe it’s because you’ve seen the owner, Catherine Cafiti, on an episode of Radio-Canada’s Dans l’oeil du Dragon, the Francophone equivalent of the Canadian Broadcasting Corporation’s (CBC) Dragons’ Den. The company is in Montréal, Québec, but their products are available across the province in many boutiques or anywhere in the world thanks to their virtual boutique. In addition to being a hand-made local product, the company also has a mission of ‘‘promoting the hiring of individuals with mild difficulties, because (the company believes that) everyone should have the opportunity to succeed in life.’’ Beautiful… like their products!
I have been looking for a good champagne vinaigrette for some time now. As you can imagine, I have abandoned my search the moment that I discovered these pearls. I prepared this salad with ingredients that pair well with champagne, such as strawberries and blue cheese.
- 2 cups (500 ml) arugula
- 2 cups (500 ml) baby spinach
- ½ cup (125 ml) croutons
- ½ cup (125 ml) walnuts, toasted
- ½ cup (125 ml) strawberries, minced
- ¼ cup (60 ml) crumbled blue cheese
- ¼ cup (60 ml) Cafiti's Champagne Vinegar Pearls
- Vinaigrette of your choice, to taste (optional)
- Mix all ingredients together and serve.
